Refried Beans

1 cup Pinto Beans [dried]
1 Tbs Olive Oil
1 Tbs Onion [minced]
1 Tbs Garic [minced]
1 tsp Red Chili [fresh, minced]
1 Tbs Extra Virgin Olive Oil
1/4 tsp Oregano [dried]
1/4 tsp Cumin
Salt
1 Tbs Basil [fresh, minced]

Soak beans over night. Drain + rinse. Place in a medium sauce pan, cover with water by 1 inch. Bring to a boil then simmer till tender, 15+ minutes. [The older the beans, the longer they will take to cook.]

Drain the beans, reserving the cooking liquid. Heat the oil over medium heat. Saute onions, garlic + chili for 1 minute. Add beans, oregano, cumin + salt to pan + turn the heat to low. Mash to desired consistency, adding a couple Tbs of the cooking liquid as needed. Stir in fresh basil + extra virgin olive oil + season with salt to taste.

Makes 4 side dish servings. Serve with brown rice. Top with sliced avocados, tomatoes, or sauteed vegetables.

Summer Squash Soup

6 medium Zucchini or Yellow Summer Squash [chopped]
1-1/2 cups Sweet Onion [chopped]
4 Garlic Cloves [fresh if available, minced]
2 Tbs Extra Virgin Olive Oil
1 tsp + Salt
Freshly Ground Black Pepper
2 cups Vegetable Broth
1 tsp Fresh Oregano [chopped]
1 tsp Fresh Thyme
1/2 tsp Fresh Tarragon [chopped]
1/4 cup Fresh Basil [chopped]

Heat oil in a soup pot with a lid to medium heat. Saute onions and garlic, seasoned with a little salt + pepper for about 5 minutes. Add squash + 1 tsp salt. Increase heat slightly + saute for 5 minutes more. Add vegetable broth, cover + simmer for 10 minutes. Add herbs + simmer a few minutes more, until squash are tender. Allow to cool slightly then puree. Gently reheat if necessary or serve at room temperature.

Serves 4 to 6.

Morel Zucchini Linguine

3 Garlic Cloves [minced]
1 medium Shallot [minced
4 oz Morel Mushrooms [bite sized, washed]
2 medium Zucchini [1/2″ thick slices]
2 Tbs Butter
1 Tbs Extra Virgin Olive Oil
2 servings Linguine [dried, cooked until al dente in salted water]
1/2 tsp Fresh Thyme Leaves

Salt + Freshly Ground Black Pepper

Melt 1-1/2 Tbs butter in a large saute pan over medium heat.  Saute shallots + garlic for several minutes till wilted + fragrant.  Add mushrooms + zucchini.  Saute until zucchini are tender, just over 10 minutes.  Stir in pasta, thyme + remaining 1/2 Tbs butter.  Season to taste with plenty of black pepper.

Serves 2.

Linguine with Clams

1 lbs Little Neck Clams [live, in shells, scrubbed clean]
2 Tbs Extra Virgin Olive Oil
5 Garlic Cloves [minced]
1/2 cup Clam Juice [or 1 small can chopped clams in juice]
1/2 cup White Wine
3 tsp Dried Italian Herbs [1 tsp Basil, 1 tsp Oregano, 1/2 tsp Parsley, 1/4 tsp Chives, 1/4 tsp Thyme]
1/4 cup Basil [fresh, chopped]
1/4 cup Flat Leaf Parsley [fresh, chopped]
1/2 lb Linguine [dried]

Heat olive oil in a large saute pan with a lid. Saute garlic over medium low heat for 2 minutes, making sure not to brown. Add dried herbs, stir, then add white wine. Simmer for 2 minutes. Add clam juice. Bring to a steady simmer and allow to reduce for 15-20 minutes until thickened and less than half original volume.

Cook pasta in salted water till al dente.

When sauce has reduced, add clams to pan and cover. Steam clams over medium high heat for 4 to 6 minutes, discarding any clams that do not open. Stir pasta + fresh herbs into pan and serve very hot in shallow bowls.

Serves 2 generously.

Penne Puttanesca

10 Anchovy Fillets
2 tsp Crushed Red Pepper Flakes
3 Garlic Cloves [large, minced]
2 Tbs Extra Virgin Olive Oil
1 28 oz can Diced Tomatoes [in their juices]
3 Tbs Capers [in brine, drained]
1/2 cup Kalamata Olives [pitted, rinsed + halved]
2 tsp Oregano [dried]
1/4 cup Italian Parsley [fresh, flat leaf, chopped]
1/2 cup Basil [fresh, chopped, several small leaves reserved for garnish]

1 lb Penne Pasta [dried]

Cook pasta until al dente in salted boiling water.  Meanwhile, heat oil over medium heat.  Add garlic, anchovies + crushed red pepper.  Saute for several minutes until anchovies begin to break up.  Add tomatoes + capers and simmer for 5 minutes.  Add oregano + olives and simmer for 5+ minutes more.   Stir in herbs just before serving.   Serve over hot pasta + garnish with whole basil leaves.

Mustard Sauce

2 Tbs Dijon Mustard
2 Tbs Whole Grain Mustard
2 Tbs White Wine
1-2 Garlic Cloves [minced]
2 Tbs Extra Virgin Olive Oil
1 tsp Herbs [fresh chopped chives + thyme]
Freshly Ground Black Pepper

Heat olive oil over medium low heat in a small skillet. Add garlic and cook for 1-2 minutes [do not allow garlic to brown]. Add white wine and simmer for 2-5 minutes, until alcohol is cooked off. Transfer to a small bowl and mix in mustard. Add herbs and season.

About 4 servings as a topping for grilled or broiled salmon. Can be easily scaled up or down. Experiment with other herbs like tarragon, marjoram and oregano.

Garlicky Hummus

2 cans Garbanzo Beans [rinsed]
4 Garlic Cloves [make a very garlicky hummus]
1/4 cup + 2 Tbs Tahini
2 Lemons [juice only from 1-1/2, or more]
1/2 cup olive oil
1 tsp Cumin
dash Cayenne Pepper
Salt + Freshly Ground Black Pepper
Smoked Spanish Paprika [garnish]

Add beans, garlic, tahini, lemon juice + 1/4 cup of olive oil to food processor and process till smooth. Add seasonings, process again. Taste, adding more lemon juice, salt + pepper to taste. Garnish with a sprinkle of smoked paprika and serve immediately.

Party size. Serve with bread and veggies.

[Use only two garlic cloves for a less garlic-dominant spread or if you’re going to serve it the next day.]

Green Lentil Hummus

1 cup French Green Lentils
1/4 tsp. Dried Thyme
1 Bay Leaf
6 Tbs Extra Virgin Olive Oil
1 Lemon [juice only]
2 Garlic Cloves [smashed + peeled]
1/4 cup Tahini
1/2 tsp Cumin
1/4 cup Water
Salt + Freshly Ground Black Pepper
Fennel, Carrots, Radishes [sliced thinly for dipping]

Simmer lentils in 2 cups water with thyme + bay leaf till tender, about 20 minutes.   Allow to cool slightly.  Process all ingredients in a food processor till smooth, adding a dash more water or olive oil if necessary.  Serve with veggies, crackers, or bread.

Makes plenty. Would be great to half for a regular day; make the whole recipe for a party.

Sandwich Tofu

1 lb Extra Firm Tofu [high protein if available, sliced into 1/2″ thick slices]
2 Garlic Cloves [minced]
1-1/2 tsp Tamari
1-1/2 tsp Extra Virgin Olive Oil
1 Lemon [juice only]

Remove excess water from tofu by arranging slices on a kitchen towel and allowing them to dry for about 15 minutes. Preheat broiler. Combine, garlic, tamari, oil and lemon juice. Arrange tofu slices on a baking sheet + pour dressing mixture over top. Move slices around to coat with lemon juice mixture. Broil for 10 to 15 minutes, or until garlic and tofu begin to brown.

Cool to room temperature. Stack up with your favorite ingredients to create a filling sandwich.

Serves 3 – 4
